Candele lunghe


Candele is a long pasta shape born from the great Neapolitan gastronomic tradition.
As the name suggests, this pasta is so called because of its shape, very similar to candles, the only source of lighting before the advent of electricity.
Different from Ziti for the diameter (which is bigger), Candele must be broken by hand into three or five parts before being cooked and they match perfectly with the “Genovese” and with Ragù.
